Què farem?

We start by making different bombons -explaining temperatures and techniques with different ingredients to take home and share.
After we get deep into learning about the origin, history and evolution of chocolate: from the fruit to the trading., meanwhile we make 3 hot drinks based on cacao -starting from the grain and roasting-, explaining how and when this differences were developed.

Keri, with a bachelor's degree in Gastronomy, has experience in chocolate making -traditional and confectionery. Aurora, with a great knowledge about history and traditions of Oaxaca. We both will lead you to have a great time learning about chocolate.

So much fun!!! Aurora was so friendly and kind and Keri was very excited to work with us. We have a great time, and I can’t wait to come back in the summer.

My brother and I had a great time making bonbons with Keri, then toasting and grind our own cocoa paste, and then making three varieties of hot chocolate with Aurora. Keri’s instruction was accessible to everyone, but I was able to ask more detailed culinary questions, and Aurora was similarly able to separate between general information and history, and more details Q&A. We absolutely wouldn’t have done something like this on our own, or even found the artisanal food hall where they operate their business. They’re also both very kind, and we felt very welcome.

This was by far one of my favourite things to do! Don’t miss out on this! I’ve been to chocolate museums all over the world (Hershey’s in Pennsylvania, Japan’s Hokkaido Ishiya Museum and Chocolate tour etc.) but nowhere did I obtain the knowledge, passion and the ability to actually learn about the process of making chocolate the way I did here! Keri and Aurora take the mystery out of the process and it’s amazing! We made our own chocolates with delicious local cacao beans from Tututepec, a small batch producer from Oaxaca, and then Aurora took us through the history of Mayan, Aztec, Spanish Colonial and modern chocolate. We made the chocolate drinks along the way exactly the way the Mayans, Spanish and Oaxacans made/make it. The space the chocolate is made in is super cool too and you can eat dinner or grab a drink there too! Can’t say enough good things about this!!

I had the best time! Wanted to learn about the history and significance of chocolate in México and got a great experience with history snippets. Made and tried 3 different kinds of chocolate drinks from 3 eras, history lessons, I could ask questions and the hosts were both lovely. Also made bonbons and learnt about artisanal v industrial chocolate making process. A great experience, and lovely people.

Aurora and Keri are really passionate about chocolate making, the history and cultural significance of chocolate in Oaxaca and made this a great experience. We made some delicious chocolates, ground cacao beans and drank so many cups of hot chocolate that I was buzzing from a chocolate high. They work with a local cooperative of growers and really care about all aspects of creating and enjoyable and educational experience.

The workshops takes around 2hrs and a half and 3 hrs depending on participants and weather.
We do a little bit of workout (for grinding), not more than 5min.
Confy clothes are suggested (some chocolate could get there).
