You will get to know the local flavors and the high end restaurants of the city in a unique experience. Because we are convinced that the only way to know the culture of a place is to taste its food and the culinary expressions of its people.

The culinary concept of San Cristóbal de las Casas is in its premises, in its recipes and vegetables, in markets and restaurants; in the kitchens that represent the best of the Pueblo Mágico. For that reason, Tomate Quesillo is the result of 4 years of research in the gastronomic scene of this city in the state of Chiapas.

We´ll start at La Abuelita Books, Coffee and Food, with a small dish and talking about the reasons behind Mexican cuisine, we will visit 5 restaurants, from the highest end to local gems. In each one we will eat and talk about techniques, textures, ingredients and history of this great cuisine, which is recognized by UNESCO as a World Heritage Site.

All our tour is done on foot, and it is in the center of the city. In our tour we walk an approximate 1.5 km in intervals of maximum 600 meters.
You will get to know the local flavors and the high end restaurants of the city in a unique experience. Because we are convinced that the only way to know the culture of a place is to taste its food and the culinary expressions of its people.

I am the founder of Tomate Quesillo gastronomic laboratory, where we have researched Mexican and Chiapas food for more than four years. We are dedicated to working on the recovery of recipes and food traditions in Mexico. I also belong to the Slow Food Mexico Cooks Alliance, where we seek with our work to provide good, healthy and fair food.
I also started the restaurant inside the Abuelita Books, Coffee & Food bookstore.

This workshop is given in collaboration with Citlali Ocampo. Chef Chcolatera, who for more than 5 years has participated as a speaker at different chocolate fairs, also she was part of the staff of José Ramón Castillo and has taught at different universities. We´ll begin at Abuelita Books, Coffee & Food, later on, we will visit 5 other restaurants, some recognized by reviews others our rising jewels visited only by the people of the town. We will also walk through the streets of San Cristóbal de Las Casas and talk about the history and some anecdotes of our city.

I highly recommend doing this as soon as you get to San Cristobal. Victor is a chef who knows all the best spots and everywhere we went people knew him. So it’s like getting the key to the city. The food was incredible and far exceeded the cost in terms of value. Victor is also an inspiring person who is on the forefront of the real food movement. His passion for fresh, ethical, locally sourced food will really move you. And he’s a wealth of knowledge on the subject.

From start to finish, this walking food tour was exquisite. We began at the cafe at Victor’s bookstore, and lovingly ate/drank our way through San Cristóbal while Victor regaled us with local history and his personal stories while he was a chef overseas. Each of the stops were well-planned and thought out. In fact, we enjoyed each stop so much and thought, wow - we wouldn’t have been able to find this on our own, much less eat the food that we had! The walking in between was not far from each restaurant visit. The food that we sampled was generous and delicious! Come hungry! You will be full and satisfied on this tour. And Victor was more like a friend you’ve known for years rather than your run-of-the-mill tour guide. Highly recommend! Do it!

I highly recommend this food tour. I booked it for me and my husband and it was just us two which was perfect! We learnt so much about Mexican cuisine and Victor and the various restaurants catered so well for me being a veggie and my husband eating anything! It was great to get to know Victor as well, not only did we learn about food but we learnt about Mexican culture and Chiapas and so much more than we expected!

Si estas en San Cristobal y te gusta la buena comida, amena compañia y aprender cosas nuevas, este es el tour perfecto! Victor, tu anfitrion es una persona muy y profundo conocedor de la cultura gastronomica Chiapaneca y Mexicana en general, te explicara, te contara historias y te hara pasar una velada increible y al mismo tiempo aprenderas y degustaras excelentes platillos que van desde los mejores tamales de San Cristobal hasta platillos sofisticados en los lugares de alta cocina de San Cris, siempre maridados con las mejores bebidas alcoholicas y sin alcohol. El tour se realiza en lugares ubicados en el Centro del pueblo y muy bien escogidos para su deleite. Los otros participantes que eran procentes de Norteamerica hicieron el tour aun mas interesante ya que tenian un interes genuino en el conocimiento culinario y eran muy amables y simpativos. La logistica y la organizacion son excelentes. El tour empezo a la hora planificada. Victor habla español y muy buen ingles tambien, asi que dio el tour en ambos idiomas. En mi caso que soy vegetariana, se adaptaron las degustaciones a mis necesidades, cosa q se agradece mucho! Gracias Victor por compartir sus conocimentos y hacernos pasar una hermosa tarde!

Foi uma excelente experiência. Conhecemos diversos pratos tipicos da culinária local, sempre acompanhados de uma ampla explicação sobre as suas origens. Visitamos restaurantes mais simples e muito sofiaticados, e em todos experimentamos diversos pratos e fomos muito bem atendidos. Recomendo!

El tour es una gran oportunidad para conocer la cocina chiapaneca de la mano de un chef. Víctor es muy cálido y te hace sentir como si lo conocieras de años. Recomendamos mucho la experiencia porque nos guió para conocer excelentes restaurantes, los cuales apoyan a productores locales y destacan por su calidad. Disfrutamos mucho sus sabores, todas las ciudades deberían contar con un tour así.
