Què farem?

Over the course of the three-hours, we make several loaves of bread. To kick things off we pop our first loaf of bread in to bake while I take you through the order of events of the course. Once the itinerary is covered, participants begin to mix their own loaf of sourdough - whilst I demonstrate - learning all the proper techniques to knead and fold our dough.

Whilst our dough rests we sit down for a coffee/tea and sample the now baked first loaf of bread, fresh out of the oven. During this time, I present a PowerPoint presentation on the origins and history of sourdough so that everyone leaves with a deeper breadth of knowledge. This covers all the steps of breadmaking and a breakdown of starter culture.

Following this, we knead and fold the bread for the first time and talk about techniques and then bake the remaining loaves demonstrating different baking styles, free standing and in a bread pan.
As they bake, I demonstrate how to feed and maintain the living culture that you will take home with you so that you can continue making bread. Everyone also leaves with their own loaf of baked bread as well as an additional loaf to bake at home, accompanied by a recipe book to facilitate future baking success.

I opened my own Bakery/Cafe in Belgrave and supplied the local Dandenong Ranges community with amazing Pastries, Breads and Cakes for 9 years before selling and then obtaining my Cert IV Training and Assessment and becoming a full time Teacher in Bakery and Patisserie at William Angliss Institute.

Whilst obtaining my Certificate I started my Sourdough bread baking school from home with Saturday sessions from 12pm-3pm teaching students how to mix, knead and bake Sourdough plus how to maintain the culture.

The Workshop with be in the main house cottage kitchen with polished timber floors and a large recycled timber table to demonstrate mixing and dough moulding and a large new stainless steel oven to bake in.

Julian's sourdough class was amazing, we learnt so much about both the theory and practice of making good sourdough, and feel confident to recreate it ourselves at home. We had a lovely small intimate group in Julian's beautiful home in the Dandenongs, so the class was very hands on and we got to make LOTS of bread! Julian was kind enough to give us some of his 20 year old starter to take home, which was amazing as we have previously failed to start our own culture from scratch. I would highly recommend this workshop to anyone curious about making bread, or who wants to up their sourdough game. Julian is an expert having worked in the area for most of his life, and his experience really shows. The class really exceeded our expectations!

Julian was very friendly and we were welcomed with yummy patisseries he had made earlier that day. Julian was a great teacher and had a wealth of knowledge in bread making. He provided us with resources to make our own bread and freshly baked bread to take home. We can’t wait to make our own sourdough bread!

Baking within minutes of arriving makes this a hands on experience. Julian teaches in words, demonstrates in action and encourages participation with a "have a go" attitude. Sampling the first loaf, with a tea or coffee, gave us a taste to look forward to at home. We each got to mix up a batch of dough to bake later at home (bring a container to carry it.) Together with a slide show and a take home copy of the recipe to write notes on, there were lots of "aha" learning moments, which gave us the confidence to try baking at home. Julian is an experienced and clear teacher. We enjoyed learning from him and can recommend this experience to others keen to unlock the mystery of sourdough.

Julian made us feel right at home in his kitchen showing us both the science and practice behind making the perfect sourdough. He is extremely knowledgeable in his profession and very welcoming His location is about 1 hours train ride from Downtown Melbourne and very well worth it.
