You can see 50 different knives and 20 sharpening stones here.

We keep our traditional artisan style. Our works are far from modern high-tech things. It's not fancy but practical and contains rich cultural history.
I don't use any machines or special equipment. All works are done by our hands, stones and water. You can do it same in your home later.

All tools for sharpening are prepared. I am using these tools for my daily work. You don't need to bring anything.

I will show my sharpening process and let you do.
In the lesson, we use 3 stones for 1 knife sharpening. You see and do full process of Japanese knife sharpening.
After sharpening, you can cut tomato. You will be surprised the smoothness.

You can bring your knives for sharpening, if you have.

We cut vegetables by Japanese knives and Vietnamese knife. You will know how difference cutting feeling by each type of knives.

After this experience, you will know uniqueness of traditional Japanese knives and sharpening techniques.

It takes about 90 min.
Other things to note
Experience time can be flexible. If you will come delay or early, please message me. I try to adjust it.
Ground floor is burger shop - Con Bo Map. I will wait you at this burger shop, then go up to my workshop.
We don't accept credit card. If you want to buy something, please prepare cash.

I'm selling Japanese knives with sharpening service for professional chefs, fine restaurant and home cooks in Vietnam. Almost my customers are foreigners from Europe, America, and Australia. I am sharpening over 100 knives every month and teaching knife sharpening.

My hometown is Sanjo, Niigata, Japan. I learn knife sharpening in my hometown. Sanjo is village of traditional blacksmith. We are proud of our craftsmanship and 400 years history. All of my knives are made in Sanjo, Japan.
I believe our works are highest grade in the world.

I am introducing traditional Japanese beauty and craftsmanship to Vietnam. Market is full of imitation, fake and copy products. I want to show authentic handworks. Real crafts bring us happiness, energy and better life experience.

I will condact this workshop in my working place in my house. There are full set of professional sharpening tools and stock of Japanese knives.
Ground floor is burger shop. We meet at this burger shop and go to my working place. My working place is 3rd floor. The house is located an ally near Landmark81.

If you want to learn anything about Japanese knives and knife sharpening, visit the workshop at Hiroshi! We had little to no knowledge about the sharpening process. When we left we found the courage to continue to practice this skill at home. He had so much knowledge and answered all of our questions, along with great stories about his hometown. First you will learn about the knives, the sharpening process and then you can practice it yourself. Great workshop! He also has beautiful knives for sale!

Great class! I was the only guest and felt very welcomed. I was early and Hiroshi-san was already downstairs awaiting my arrival. After climbing a couple flights of stairs, we arrived at his cosy studio. He unravelled his collection of knives and started talking about the basics of sharpening and types of knives. I thoroughly enjoyed the demonstration and hands on segment. We chatted for quite awhile after the experience and Hiroshi-san prepared delicious tea and a snack too. Didn't purchase any knives at the end as I don't have checked baggage back home, but it was overall a good experience!

Hiroshi is a master of his craft. As a world traveling chef I feel I found something special with Hiroshi apart from actually going to Japan. Wet stone sharpening intimated me before this session with Hiroshi and I now feel at least confident enough to start sharpening on my own. His knives are beautiful and much lower in cost than you would pay almost anywhere. I purchased two lovely knives that will be with me forever. Thank you Hiroshi!

We have a memorable afternoon woth Hiroshi. Me and my girlfriend got knowledge of the technique, the history of the craftmanship, structure, value of the knives. We ended with matcha drink and a little chat. Thanks a lot mr Hiroshi
